Chocolate Chocolate Zucchini Muffins


In a mixer add:
½ cup sugar
1/4 cup brown sugar
1/2 cup cocoa powder
1 cup wheat bran
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
 2 cups shredded zucchini
1/2 cup water (a little more if using whole wheat flour)

Mix together then fold in

1 cup chocolate chips

Pour 3/4 full into cupcake liners. Makes 16 muffins.

Bake at 375 for 20 minutes.

For a Vegan Recipe:
Substitute 2 Tablespoons of flax seed or chia seeds mixed with 2 Tablespoons of water.
Substitute Chocolate Chips for Vegan coaco chips.
