Chocolate Chip Zucchini Bread

Shredded zucchini can be frozen now, and saved to make this delicious bread all winter long!

Makes 2 loafs;

Blend together:
3 TBS milled flax seed
1/2 cup water
3/4 cup yogurt
1 TBS vanilla extract
2 tsp cinnamon
3/4 cup white sugar
3/4 cup brown sugar
2 cups shredded zucchini

3 cups all-purpose flour
1 teaspoon salt (Sprinkle on top of flour)
1 teaspoon baking powder  (Sprinkle on top of flour)
1 teaspoon baking soda  (Sprinkle on top of flour)

Mix well, and then fold in:
2 cups chocolate chips

Pour batter into a loaf pan.
Sprinkle the top with 1/4 cup brown sugar- Optional

Bake at 350 for 50 minutes
