Wisconsin Cauliflower Soup

Zupas' Wisconsin Cheese Soup, ahh they had me craving it night and day!  But after a few try's, I think that I have duplicated that creamy, delicous soup!

2 TBS butter
2TBS flour
1 1/2 cups of milk (may use powdered milk or rice milk)
1tsp of chicken base (or 1 bouillon cube)
1/2 tsp minced garlic (1 clove)
1/4 cup chopped onion
2 cups of steamed chopped cauliflower (1/2 a large head)
1 tsp dijon mustard
1/2 cup pepper jack cheese
1/2 cup cheddar cheese

Over medium heat, melt butter then stir in garlic and onion. When the onions are transparent add the flour. Stir until smooth. Add milk all at once and add base. Stir until mixture is clump free. Keep stirring until mixture is thick and bubbling. Then add cauliflower. Allow cauliflower to cook down, about 3 minutes. Using an upright blender (the immersion blender does not get this soup smooth enough,) blend until smooth.  Return the soup to your pot and add the dijon mustard and cheese.  Add salt & pepper to taste.

I love to pair this soup up with Mango Berry Salad and fresh rolls!
