Tomato Spinach Sagg

This Indian dish is delicious and so easy to prepare.  If there are any leftovers, they make for a yummy lunch!




Sauté together:
2 tablespoons Olive oil
1/2 Tablespoon minced garlic
2 tablespoons finely chopped gingerroot
1 tablespoon coriander seed, ground
1 teaspoon cumin seed, ground
1 teaspoon cayenne
1 1/2 teaspoon salt

Add the above mixture to:
3 cups fresh spinach
1/2 quart tomatoes

Place in crock pot on low for 5 1/2 hours.
Then add :
1/2 cup cream
Fried Tofu

Serve over rice, with a side of fresh Nann.
