Stuffed Portabella Mushrooms

This is the perfect recipe for a Summer Barbecue.  It is full of flavor and packed with nutrition!

6 Portabella Mushrooms washed and patted dry (without stems)
1 Red Bell Pepper sliced
1 yellow Bell Pepper Sliced
1 Onion sliced
1 cup of Fresh Salsa
2 Avocados sliced
1/4 cup Soy Sauce
1 clove of minced garlic
6 slices of Pepper Jack Cheese (Optional)

In a dish mix the soy sauce & garlic.  Soak the mushrooms in the sauce while you prepare the other toppings.
Grill the mushrooms, peppers, and onions.  When the Mushrooms are tender (about 4 minutes on each side) place a slice of cheese on the mushroom (in the underside where the stem was.)  Place the roasted onions and peppers, salsa, and avocados on top.
