Chow Mein

Chow Mein is a great way to use your garden vegetables.  My kids gobble up this dish as fast as I can serve it.

1 TBS Sesame oil
6 green onions chopped
1 clove of garlic minced
1 young zucchini chopped
1/2 cup chopped celery
1/2 cup mung bean sprouts
1/2 cup snow peas
1/2 cup of chopped broccoli
1/2 cup matchstick carrots
2 cups of shredded cabbage
1/4-1/2 tsp red pepper flakes

2 cups of cooked chow mein noodles (1/2 a package)

1/4 cup beef broth
2 TBS Soy Sauce

In a wok heat the oil until sizzling.  Add the green onions, garlic and zucchini.  Cook until the zucchini is tender.  Add the remaining vegetables.  When the cabbage leaves begin to wilt, sprinkle on the red pepper.  Add thee noodles.  In a bowel mix the broth and soy sauce, and pour over the noodles and vegetables.  Stir the mixture well and cook on low until the sauce is absorbed.
