Bok Choy Soup (Chinese Cabbage)

This is a quick yummy soup, packed full of nutrition. I will admit that I was pleasantly surprised at how yummy this soup is!

1/2 TBS crushed Sunflower Seeds, Sesame Seeds, or Chia Seeds
1/2 TBS Olive Oil
1 tsp Fresh Minced Garlic
4 Green Onions -chopped

Saute the above ingredients, until oil is gone and Garlic and Seeds are toasted.

Then add:
3 Cups of Chicken Broth
1 tsp Red Pepper Flakes (May add more, if desired)
2 TBS Soy Sauce

Bring to a boil, then lower heat to Medium. Then add:

10 Bok Choy leaves sliced thinly. (May subsitute with other hearty dark greens: kale, Swiss Chard, Beet Greens.)

Cook until Bok Choy leaves are dark green (about 2-3 minutes.)
