Southwest Lettuce Wraps

This is one of my all-time favorite recipes! It is the perfect lunch, dinner, or appetizer.  Move over Chili's these lettuce wraps are just as delicious as your southwest egg rolls, but much healthier!


1 TBS olive oil
1 minced red bell pepper
4 minced green onions
1 1/2 cups of corn
1 1/2 cups of cooked black beans
1/2 cup chopped spinach
1 jalapeno diced
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp salt
1/8 tsp cayenne pepper
Romain Lettuce leaves

Optional:
1 cup of shredded cheese (I like pepper jack, but cheddar works well.)
1/2 cup sliced olives
1 diced avocado
1 cup of salsa or pico di gallo
In a skillet heat together the oil, peppers, onion, corn, beans, and spinach.  When the spinach begins to wilt, sprinkle the seasonings over the mixture and mix well.
Spoon the bean mixture into the cleaned lettuce leaves.  Top with cheese, olives, avocado, and salsa.
