Gnocchi

This recipe is a little bit more time consuming, but so worth every minute you put in to it!  My mouth just waters at the thought of this delicous pasta!

2  large potatoes mashed (no extra liquid)
1 egg
1 tsp salt
1 - 1 1/2 cups of flour

Mix the mashed potatoes, egg, and salt together.  Slowly add the flour 1/4 cup at a time.  Keep adding flour until the dough forms into a ball.
Once the dough is formed, roll the dough out into 4 "snakes".
Cut each snake into 1/2 inch pieces.
Roll the pieces off of a fork (place the dough on the back of the fork and roll it towards the tip of the prongs.)

Place the gnocchi dough into a pot of boiling water and boil for about 5 minutes.  The gnocchi will float to the top as they are cooked.

Drain the water, and serve with your favorite Spaghetti Sauce.
For an authentic flavor: add 1 cup of cream to 1 qt of spaghetti sauce and heat on med-low until hot.
The creamy sauce will leaving your tongue craving for more!

Serve with a side of fresh Artisan Bread to complete your meal.  You will want something to help you lick your plate clean of the delicious creamy spaghetti sauce!
