Fast & Easy Crepes


Crepes
Place in a Blender:

2 eggs (or 1/2 cup chia gel)
1 1/2 cups of milk (almond milk works great!)
1 cup of flour
1 tablespoon of oil

Blend until smooth.
  1.  Spray a hot griddle with Pam Spray.
  2.  Pour 1/2 a ladle of batter (about 2 Tablespoons), and swirl the batter out into a large circle. (Hint: using the bottom of the ladle, start making a circle in the middle of the batter, then continue to make the circle bigger and bigger until you reach the edge.)
  3. Cook until the top is not wet, and the bottom is golden.
Makes about 16 - 18 crepes

Fill the crepes with fresh fruit or canned pie filling.  I love to add whipped cream and a sprinkle of powdered sugar!
