Place in a Blender:
2 eggs (or 1/2 cup chia gel)
1 1/2 cups of milk (almond milk works great!)
1 cup of flour
1 tablespoon of oil
Blend until smooth.
- Spray a hot griddle with Pam Spray.
- Pour 1/2 a ladle of batter (about 2 Tablespoons), and swirl the batter out into a large circle. (Hint: using the bottom of the ladle, start making a circle in the middle of the batter, then continue to make the circle bigger and bigger until you reach the edge.)
- Cook until the top is not wet, and the bottom is golden.
Makes about 16 - 18 crepes
Fill the crepes with fresh fruit or canned pie filling. I love to add whipped cream and a sprinkle of powdered sugar!
